Gluten Free Crumpets
Gluten Free Crumpets
Serves: Makes 12

Cook: 10 minutes
Ingredients:
- 400ml Almond Milk, warmed to room temperature
 - 1 ½ tsp Raw Earth
 - 1 tbsp Yeast
 - 300g Gluten Free Self Raising Flour
 - 1/2 tsp Salt
 - 1/2 tsp Bicarbonate of Soda
 - 1 tbsp Oil, for frying
 - Natvia Fruit Spread, to serve
 
Method:
- Combine the almond milk, Raw Earth and yeast in a bowl. Set aside in a warm area for 10 minutes or until it starts to form bubbles on the surface.
 - In a separate bowl combine the flour, bicarbonate of soda and salt. Add the frothy milk mixture and whisk until the batter is smooth.
 - Leave to prove covered in a warm area for around 90 minutes. You will know it has proved when there is air bubbles on the surface of the batter.
 - Once the batter has proved, heat a frying pan over a medium heat with a little oil. Place egg rings into the frying pan.
 - Spoon 2 tablespoons of the batter into each ring and cook for 3-5 minutes. Bubbles should form on the top of the crumpet.
 - The top of the crumpet should be fairly dry before you flip it over. Once turned over cook for a further 1-2 minutes.
 - Remove from the pan, serve hot with Natvia fruit spread.
 
Nutrition Tips:
- Make the crumpets ahead of time and reheat in the toaster.
 - Drizzle with Natvia Salty Caramel Sauce for a weekend treat.
 - If the batter sticks to the egg rings, grease the rings beforehand.
