Ingredients:
- 40g Cacao
- 180g Almond Meal (1 1/3 cup)
- 1/2 tsp Baking Powder
- 1 tsp Apple Cider Vinegar
- 60g Butter, melted (1/4 cup)
- 1 tsp Vanilla
- 3 tbsp Raw Earth
- 1 Egg, lightly whisked
- Pinch of Salt
Cream Filling:
- 100g Cream Cheese, softened
- 1 tsp Vanilla
- 2 tbsp Raw Earth, blitzed
Method:
- Preheat oven to 180C, line a baking tray with baking paper.
- Combine all of the ingredients for the biscuits in a bowl. Mix until well combined and dough is formed.
- Flatten the dough and using a rolling pin, roll the mixture out onto a clean surface.
- Using a cookie cutter cut 16 circles from the dough and place on the prepared baking tray.
- Bake for 15 minutes. Once cooked remove from the oven and leave to cool on the tray.
- While the biscuits are in the oven, prepare the filling by combining the ingredients in a bowl. Mix until smooth and creamy.
- Once cooled, spread some of the filling onto a biscuit and place another one on top. Repeat for the remainder of the biscuits.
