Mini Raspberry, Orange, and Almond Friands

Ingredients:
- 155g Almond Meal
- 149g Raw Earth, blitzed until fine
- 90g Gluten Free Plain Flour
- 150g Butter, melted
- 5 Egg Whites
- 2 tsp Orange Zest, finely grated
- 125g Raspberries
Method:
- Preheat oven to 160C (fan forced) and grease a mini muffin tray.
- Combine the almond meal, Raw Earth and flour in a bowl.
- Add the melted butter, egg whites and orange zest. Mix until the batter is smooth.
- Spoon into the prepared mini muffin tin and top each friand with a raspberry.
- Bake for 15 minutes or until golden. Serve warm.
Nutrition Tips:
- Dust with extra blitzed Raw Earth before serving.
- For a more tart friand exchange orange zest for lime zest.
- Cut the raspberries in half if you do not have enough for each friand.
